About Jacques Barnachon
Michelin-starred Jacques Barnachon started his culinary career in 1987, honing his skills with various master chefs, including Philippe Gobet. He received his first awards in 1993 at the roast-cooks contest for the Doubs and the French Comte. In 1996, Jacques first appeared in the Michelin Guide with a “two forks” rating. Jacques is very active in the food fraternity in France; he is the commissioner of the Euro-Toques and is frequently invited as a guest chef to cook at top-notch restaurants around the world. Trained as a classic French chef, Jacques whips up innovative recipes that combine traditional French culinary styles with a taste of contemporary twists. In particular, Jacques finds inspirations from his travels; from Europe to the Middle-East and North America to Asia, Jacques has travelled to more than 50 countries and cities to discover local culinary elements that stimulate the innovation and concepts behind his own recipes. Jacques has created more than 100 foie gras recipes and is recognized as a foie gras expert. He likes to experiment with ingredients and crafts unusual pairings for his foie gras dishes. For example, foie gras is generally considered unsuitable to be paired with seafood, yet one of Jacques’ most popular dishes is a marriage of lobster and spiced paté.
About Florian Muller
La Saison’s executive chef is Florian Muller, an apprentice and right hand man of Jacques from France. Permanently based in Hong Kong, Florian oversees and realizes Jacques’ food vision when he is not here. Owning various professional culinary qualifications, Florian has more than a decade experience in French cuisine, including tenures at Nicolas Le Bec (Michelin two-star), Espace Le Bec, Rue Le Bec and Les Salins.
